THE COOK'S CORNER: Protein-Packed Quinoa and Kale Salad
Hello. My name is Marilyn Harewood. I love the Lord, enjoy working out and making meals that are simple. I am on a journey to incorporate healthy, clean and delicious eating on a daily basis. I follow a Mediterranean lifestyle; it is not a diet. I consume plant-based foods which are comprised of fresh fruits and vegetables. I also eat fish and meats and stay away from processed foods. To achieve this, it takes a bit of planning. Make a conscious effort to plan your menu together as a family before the week begins. Only shop for the items on your list. Don't be swayed by the marketing ploys that will lure you in at the supermarket.
I love making meals that are different and I will try anything. :-)
Protein-Packed Quinoa and Kale Salad
Yield: Serves 4
Prep time: 15 minutes Cook time: 0 minutes Total time: 15 minutes
Ingredients
2 cups cooked quinoa 2 cups kale 1 clove garlic 3 tbsp apple cider vinegar (use Bragg's Apple Cider Vinegar) 2 tbsp extra virgin olive oil 3 tbsp sunflower seeds 3 tbsp slivered almonds 3 tbsp dried cranberries Salt and pepper to taste
Directions
Place kale in the bottom of a large bowl and add warm quinoa on top. (This will wilt the kale just a bit.)
In a separate bowl, whisk together garlic, vinegar, olive oil, salt and pepper.
Pour dressing over quinoa and kale mix and combine well.
Sprinkle in sunflower seeds, almonds and cranberries. Gently toss.
Serve and enjoy!
NOTE: You may leave off the nuts until ready to serve. This item could last for up to 3 - 4 days in the refrigerator.
