THE COOK'S CORNER: Mamma's Favorite Picnic Beans
Hello! My name is Priscilla Cole, and from Monday through Wednesday, I am the Front Desk Receptionist and Accounting Associate at the Main Campus of TrinityLife. If you stop by or call the main number on one of those 3 days, it will be my pleasure to greet you and/or direct your call!
When I was asked to share a favorite recipe of mine, I knew immediately which one to choose. The recipe was handed down to me from my mother and I’m sure she got a copy from her mother as well – It’s called “Mamma’s Favorite Picnic Beans.” It is a family and friends favorite. I hope it becomes a favorite of yours too!
Mamma’s Favorite Picnic Beans
Ingredients:
½ lb. bacon
1 medium onion
2 cloves of garlic
½ tsp. dry mustard
½ Cup Vinegar
¾-1 Cup Brown Sugar
1 can of Cannellini Beans* - drained
1 can of Butter Beans* - drained
1 can of Kidney beans (red for color, but white works fine, too!) - drained
1 Large can of Baked Beans (Do Not drain)
(*You may substitute Grand Lima Beans for either of these)
Directions:
Pre-heat oven to 350
Dice bacon and gently fry in a large saucepan
Cut 1 medium onion into rings. Carefully add into saucepan when fat covers the bottom enough so that onions won’t stick
Add garlic and sauté for about 8 minutes - until onions are light brown and bacon is crisp
Mix together dry mustard, brown sugar and vinegar; stir into saucepan
Simmer about 20 minutes; coating bacon and onion rings
Pour contents of cans of beans into a casserole dish
(Be sure to drain all beans except baked beans)
Pour simmered mixture over beans, stir well, and bake un-covered, for 90 minutes
Option #1:
You may lay additional strips of un-fried bacon over the top of the bean mixture if you have some men who love bacon! They will cook in the baking.
Option #2:
You may double the recipe and do it in a crock pot also. Set it on Low for 6 hours; High for 3 hours. Keep it set on Warm during your event.
